At time of inspection, observed dish machine with a sanitizer concentration of 0ppm for chlorine. The sanitizer bucket for the machine was empty, and PIC changed out the bucket. After priming the dish machine, with the new bucket attached, dish machine had a proper concentration range for chlorine. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection. Chlorine must have a concentration between 50-100 ppm for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.

The establishment had to close for the 8/26 and 8/27 due to the plumber issue was still not repair. Per general manager Ray, the plumber just left the establishment one hour prior to inspector's arrival. The valve was repair on time of inspection and the hot water heater was installed. The plumber stated that it will take time for the hot water heater to fill. At time of inspection, was able to turn hot water faucets on but the water only got up to 92F.Informed general and district manager that inspector will be back tomorrow (8/29), for a re-inspection for the hot water; giving the hot water heater time to fill.

Priority Foundation-5-103.11, Pf: Capacity-Quantity and Availability-- Observed no hot water throughout the establishment. Per PIC, the establishment was getting a new hot water heater yesterday when the plumber proceed to shut off the water, and the valve snapped off. The plumber should be back today repair the water issue. Discussed MCESD's 24 hour re-inspection policy for adequate hot water capacity for facility. Explained to PIC, that the hot water needs to be available and have adequate pressure to maintain at all fixtures including the capacity to provide hot water at peak hot water demand. A re-inspection will be conducted on or before 8/26/2023 to show hot water pressure is maintained and can be provided. Correct By: Correct Prior To Reinspection
Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained-- At time of inspection, observed mop sink drain holding standing water with water. The mop sink floor drain was blocked with debris. After the debris was cleared, the water drained very slowly. Explained to PIC, to have a plumber come to the facility and inspect all the piping for the mop sink, and to have the mop sink drained and surrounding area cleaned. Ensure that the mop sink is draining properly and the area is cleaned. Correct By: Correct Prior To Next Routine Inspection
