Inspector's notes

In walk-in cooler, observed two plastic 22 qt containers (over 12 inches deep) of veal stock/52-53F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per staff, the veal stock had been cooling for about 1.5 hours. The stocks being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
