With gloved hands, worker placed raw ground beef patties on the grill, and without washing hands, donned new gloves to continue with food preparation and touching kitchen surfaces. Discussed the importance of proper hand washing and when hand washing is required with the PIC and other staff. Hands must be washed at any time contamination occurs and when changing tasks. In cold drawers under cooking equipment, observed TCS food holding over 41F including veggie patties/48F, cheese/52F, hot dogs/46F, and sliced roast beef/46F. In the bar reach-in cooler/47.8F, observed one can of dairy whipped topping/48F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The whipped cream was relocated to another refrigerator, and ice bags were added to the cold drawers. Staff indicated that new gaskets have been ordered for the drawers.
