Inspector's notes

At start of inspection, observed six cartons of dairy products being maintained at room temperature, and staff immediately returned the cartons to the refrigerator. The products included 2% milk/57F, fat free milk/50F half & half/49F ice cream mix with 5% milk/59F and whole milk/54F. Per PIC, the dairy products were removed for the busy rush. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The PIC was instructed of the requirement to maintain cold TCS food at or below 41F, or correctly use time as a control. The dairy was returned to refrigeration, and per PIC, would be served within a safe time period. Corrective Action: Corrected at time of inspection.
