#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Open air cooler beside beverage station had the following TCS foods measuring an internal temperature of 68'F: sausage, egg and cheese breakfast sandwiches, prepackaged deli sandwiches, prepackaged burritos, edible cookie dough, macarons, lunchables, whole pizzas, pickle slices, whole pickles, and pb&j pocket sandwiches. Per employee cooler had been not holding temperature the previous day and food had been placed into cooler approximately 5 hours prior. As food had been out of temperature for more than 4 hours it was embargoed. Ambient air temperature of cooler measured 64.2'F with min/max thermometer. Per person in charge cooler had been fixed but was still getting down to proper cold holding temperatures. Discussed with staff placing an external thermometer into cooler to ensure that it gets to proper cold holding temperatures before placing TCS food back into cooler. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

PIC removed non-date marked food items from sales floor at time of inspection. All undated RTE/TCS foods were set aside to be properly date marked at the time of inspection.
