Inspector's notes

In the cold holding unit closest to the toaster, observed cooked sausage, brisket, ham, turkey, salmon, cheese, cream cheese, tomatoes and lettuce having internal temperatures of 44-49*F. Person in charge states these foods were placed in the unit less than 2 hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit or placed in ice baths to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Employee at make line cracked raw shell eggs into egg cooker, removed gloves, put on new gloves, and began to handle ready-to-eat foods at a prep-style refrigerator without washing hands before putting on the new pair of gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Upon instruction by inspector, PIC discussed the situation with the employee and the employee properly washed hands and put on new gloves. Corrective Action: Corrected at time of inspection.

PIC stated pest control is conducted monthly and provided receipt of last pest control having taken place on 9/21/2023. Discussed with PIC to have pest control conducted prior to reinspection on Thursday, 10/12. Food service establishments must remain free of pests to prevent spread of pathogens. Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed caulking around three compartment sink to be cracking, uneven, and to have an accumulation of black growth. Reseal so that area is smooth, easily cleanable, and prevents seepage of water. Observed missing and cracked light covers in kitchen. Replace by next routine inspection (and replace any broken lights). Also observed metal panel on wall next to prep table by bagel ovens to be broken rendering the area not smooth nor easily cleanable and has open hole where liquids could pool. Repair/replace so area is smooth, easily cleanable, and prevents seepage of water. 2nd Consecutive Violation Correct By Next Routine Inspection Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed accumulation of food debris and organic matter buildup in prep fridges and milk fridge front of house. Observed accumulation of food debris and trash under equipment front of house. Observed accumulation of food debris and general grime around perimeter of flooring throughout establishment. Observed large accumulation of dust on top of and beside bagel oven. Observed general grime buildup on underside of prep table next to bagel oven. Also observed general grime buildup in floor drains throughout establishment. Clean and clean at a frequency to prevent buildup of dust, dirt, food debris, trash, and other organic matter. 3rd Consecutive Violation.
