Discussed the following of note: slash-resistant glove usage and cleaning expectations, temperature control for salad dressings that contain garlic and oil, and hand hygiene with regards to finger cots. Metal mesh gloves should be washed, rinsed, and sanitized like other utensils and equipment, and cloth gloves should be laundered with other soiled linens. Salad dressings prepared with a mixture of garlic and an oil should be kept refrigerated at 41F or colder unless prepared with irradiated garlic products (i.e. garlic powder or granulated garlic) that are treated to prevent growth of Clostridium botulinum. To prevent potential contamination of food and equipment, employees wearing bandages or finger cots on the hands should also wear single-use gloves when handling food or utensils.

Per recipe card posted at grill station, establishment reheats commercially precooked steaks to 140F on grill, dices and seasons steak, and places the seasoned meat in a steam table to hold hot. Diced, seasoned steak is transferred from steam table to warming units at serving line and placed on 4 hour time as control (item discarded after 30 minutes in serving line for quality purposes) as indicated by written policy and labels.

Observed food residue on food contact surfaces of storage pans stored as clean. Please ensure food contact surfaces of equipment and utensils are maintained clean to sight and touch. If utensils cannot be maintained clean due to damage from repeated use, please replace. Person in charge (PIC) moved pans to sink to be re-washed, rinsed, and sanitized. Corrective Action: Corrected at time of inspection.
