The establishment has removed the F'Real Frozen Dessert machine and is not using the variance. PIC indicated this equipment will not be used again at this store.

No sink in the establishment was able to attain a water temperature warmer than 67F after running water continuously for more than 15 minutes. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Corrective Action: Correct prior to re-inspection. Re-inspection will occur on 1/17/2025.

Observed precooked snack items for roller grill (taquitos with cheese and meat, cheese omelets, and polish sausage) with internal temperatures of 47-48 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), items were moved from freezer to walk-in to thaw at 6am, more than 4 hours prior to the inspection. Items were located in a walk-in refrigerator that was not holding cold. PIC voluntarily discarded these items - see embargo form. Corrective Action: Corrected at time of inspection.

Ambient temperature of larger walk-in refrigerator was measured at 48F with min-max thermometer with out-of-temperature TCS foods inside. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. TCS items received in a delivery less than 4 hours prior to the inspection were moved to another walk-in refrigerator that was holding cold. Corrective Action: Correct prior to re-inspection. Re-inspection will occur on 1/17/2025.
