Observed prep coolers with minimum ambient temperature of 48°F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. All TCS foods in unit had been placed in unit an hour and a half to two hours prior to inspection in order to switch to lunch ingredients and were moved to walk-in to rapidly cool at time of inspection. Corrective Action: Correct prior to re-inspection. Reinspection will occur on 7/24/26. *SECOND CONSECUTIVE VIOLATION*

Inspector's notes
Observed TCS foods such as ground beef and shredded lettuce in walk-in cooler cooling in deep containers and covered with plastic wrap. All temperatures of TCS foods that were cooling were within time and temperature parameters for cooling. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective method. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Numerous cutting boards were observed with deep grooves and dark discoloration. Cutting surfaces shall be maintained in good condition to be smooth and easy to clean. Please resurface or replace. Corrective Action: Correct prior to next routine inspection. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Addl Notes: Doors to one of the dessert cases were damaged and difficult to keep fully closed. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Observed whole and packaged portioned cheesecakes in reach-in pastry case in front of house (FOH) with internal temperature of 52 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Ambient temperature of pastry case was measured at 50'F with min-max thermometer during inspection. Case is not critical refrigeration for the establishment. Pastry case may not be used for TCS foods until repairs are completed and unit can hold cold at 41'F or lower. Person in charge (PIC) moved cheesecakes to walk-in refrigerator to rapidly cool and inspector verified temperature. Per PIC, cheesecakes were placed in unit less than 4 hours prior to inspection. Corrective Action: Corrected at time of inspection.
