Observed beef rotini panned into 4 inch metal containers with an internal temperature of 53*f. According to PIC, rotini pasta comes in frozen and was previously thawed under running water for 20 minutes prior to panning it. Discussed importance of monitoring temperature when thawing under running water to ensure temperature remains below 41*f. Also discussed alternative thawing options under working refrigeration equipment to ensure temperature does not rise above 41*f.

Observed turkey deli meats in upright reach-in cooler with a date of 10/24 in zip lock bag. According to PIC, turkey is frozen, then thawed for portioning purposes and then frozen again. PIC stated deli meat was removed from freezer day prior to inspection. Discussed importance of date marking foods once package is open and when removed from freezer to ensure date does not exceed 7 days. Allowed employee to properly date mark deli meats at time of inspection. Provided handout for date marking procedures.
