Observed Spinach (50*F), Vegan Cheese (49*F), Spring Lettuce Mix (49*F and 50*F), and Romaine Lettuce (48*F) in prep cooler in front of pizza dough press. Person in Charge (PIC) stated that all food items listed were prepped ~2 hours before. PIC voluntarily embargoed spinach. PIC moved all other food items into the walk in cooler and all food items had a temperature of 43*F after 20 minutes. Advised PIC that all TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
