Observed establishment's main cold holding unit containing pre-prepared sandwiches with meat and cheese as well as yogurts and cut melons at an ambient temperature of around 50°F. All TCS foods stored inside had been delivered an hour and a half prior to inspection and were relocated to the walk-in cooler to rapidly cool. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. Reinspection will occur on 7/17/26.

Observed assorted size bottles of plain and flavored milk with internal temperatures of 52-53 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), milk was received during delivery at 10:00am, less than 4 hours prior to inspection. Items were located in a walk-in refrigerator that was not holding cold. Milk was moved to alternative walk-in refrigerator that was holding cold. Inspector verified that remaining milk was cooling. Corrective Action: Corrected at time of inspection.
