Observed an open bottle of iced tea (personal beverage) and a purse stored on a shelf above a steel prep table with a microwave oven and labeling supplies. Observed that the bottle of tea fell over and spilled during the inspection. Ensure a designated area is provided for employee personal items and beverages and that the designated area minimizes the risk of contamination of food and clean equipment. Employee moved items and cleaned the table during the inspection to correct. Corrective Action: Corrected at time of inspection.

Per PIC, slicer was used prior to inspection and then cleaned. PIC stated cleaning was finalized on deli slicer. After discussing with PIC areas of slicer still containing food debris, PIC properly cleaned slicer. Food contact surfaces must be cleaned to sight and touch. Observed cut lettuce, sliced tomatoes, sliced deli turkey/ham/roast beef, chopped cooked chicken, fried eggs, vegetarian patties, tuna salad, and various cheeses in prep tables on line to be at 49-54*F. Unit was observed at 50-51*F at time of violation and at 48-51*F throughout by end of inspection. PIC stated that all items were stocked fully prepped from walk-in approximately 1 hour prior to inspection. Also observed cut lettuce and chopped cooked chicken at 47-55*F in reach in fridge on line. Unit observed at 58-59*F. PIC stated items were stocked that morning within the last hour. Had PIC move all items to walk in to rapid cool to below 41*F. TCS items must be held at or below 41*F to prevent growth of pathogens. Correct By: Corrected At Time Of Inspection,Repeat Violations: 4th

Observed both prep tables and reach in fridge on line to be holding various TCS items out of temperature. Both prep tables were observed at 48-53*F throughout and reach in was observed at 58-59*F. PIC stated that prep tables are turned off nightly and prep tables were turned on approximately 2 hours before start of inspection. PIC stated reach in was on all night. PIC will call for maintenance for units. A 24 hour reinspection will be conducted. Discussed MCESD’s policy regarding permit suspension for inadequate cold holding capacity. Correct Prior To Next Routine Inspection Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed escutcheon plates and areas around plumbing penetrations under hand sinks in men's/women's restrooms and at mop sink to be in disrepair.
