Observed cooked, fried fish filets hot holding on the line with internal temperatures between 120-128F and pinto beans hot holding on the line with internal temperatures between 102-105F, probe thermometer, verified by PIC. PIC instructed employee to discard food, see embargo form. The fish was hot holding for 30 minutes and the beans for an hour. Discussed maintaining hot foods at 135F or above. Maintaining cooked TCS foods at 135F or more during hot holding prevents significant regrowth of heat-injured microorganisms and prevents recontamination with bacteria that are newly introduced. Corrective Action: Corrected at time of inspection.

Observed an accumulation of organic debris and soil on the nonfood contact surfaces of the fountain machine. Soil accumulations observed in the drain lines that drain into the bottom basin/drain and also on the sides of the basin/drain. PIC will clean the equipment and retrain employees to clean more frequently. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Corrective Action: Correct prior to re-inspection.

All chemicals were relocated and properly stored by PIC at time of inspection. Observed two spray bottles of degrease angled and above open container of exposed single use tongs.
