2nd repeat violation. Observed veggie patty, cooked egg patties, sliced tomatoes, shredded lettuce, tuna salad, and spinach at 44 to 50 deg F in reach-in cooler behind service line. Unit was showing an ambient air temperature of 50 deg F with min/max thermometer. Per PIC all items had been recently moved there from walk-in cooler at 2 pm.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined the steak and chicken was moved to the sandwich prep refrigerator prior to 7AM. The steak and chicken were discarded at time of inspection. Discussed utilizing deeper containers, lids, and not overfilling containers. Corrective Action: Corrected at time of inspection.
