Inspector's notes
Observed gourmet bagels (spinach, hash brown, jalapeno cheddar, and green chille) and raw eggs held at room temperature on the main prep line/ bagel display. As per the person in charge, staff uses time and not temperature as a control for gourmet bagels and raw eggs. Food under time as a control must be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control. No discard times observed at time of inspection.

Core-3-302.12, C: Food Storage Containers Identified with Common Name of Food Observed two unlabeled spray bottles filled with clear liquid by the oven in the kitchen. After discussion with the person in charge it was determined that the bottles were filled with water. Foods and ingredients not readily identifiable on sight that have been removed from the original container shall be labelled with the common name of the food/ingredient.
