All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at 200PPM at time of inspection. Corrective Action: Corrected at time of inspection.

After discussion with the chef, it was determined cool water was added to the beans 30 minutes ago which caused the temperature of the beans to drop below 135°F. Predefined Comment: All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

In the walk-in cooler observed a container of sliced ham and a container of diced ham with no date mark label. In the walk-in cooler observed a container of cooked stuffing (cooked sausage and vegetables) with a 3/4/25 date mark. After discussion with the person in charge it was determined the ham was cut on 3/18/25 and the stuffing was prepared on 3/4/25, frozen on 3/4/25, and thawed in the walk-in cooler on 3/20/25.

Without washing their hands and changing their gloves, the chef touched the handles of pans and continued cooking. According to the person in charge the foods were prepared and frozen on those dates are removed from the freezer yesterday. The date the food was frozen, and the date the food was removed from the freezer to thaw in the refrigerator. The total time in the refrigerator at 41*F cannot be more than 7 days. Observed a container of butter stored at room temperature in the kitchen. Establishment uses time as a control for butter. No label or marker was present on the container of butter. When utilizing time as a control food shall be marked, identified, or logged with the time that is 4 hours past the time it was removed from temperature control. After discussion with the chef it was determined that the butter was removed from temperature control at 9:30 AM. The discard time label was attached to the butter's container at time of inspection. Reviewed written time as a control procedures. Added statement regarding marking, identifying, or logging food with the time that is 4 hours past the time it was removed from temperature control. Observed a container of cooked sausages/67°F cooling on the bottom shelf of the prep counter in the kitchen. According to the chef, the sausages were cooked this morning and had been cooling for 2 hours. TCS foods shall be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less. The sausages were moved to the walk in cooler at time of inspection to continue cooling. Discontinue cooling at room temperature. Discussed cooling methods with the person in charge.
