Inspector's notes
At time of inspection observed food employee cleaning a chef knife at the three compartment sink. Observed food employee run the knife under quaternary ammonia sanitizer for 10 seconds before wiping the knife off with a paper towel and placing it on a magnetic holder. According to manufacturer's instructions food contact surfaces must be sanitized with a contact time of at least 1 minute.

Predefined Comment: Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturer's specifications. The person in charge moved the knife to the three compartment sink to be re-washed and re-sanitized. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff (a policy issue, verification breakdown), which resulted in the violation. Discussed air drying food contact surfaces. Corrective Action: Corrected at time of inspection.
