Observed multiple foods in three door prep cooler across from grill at temperatures of 50 - 53*F (See Embargo Listing) As per the cook in charge the top was open to prepare some meals during lunch, but must of the food had been in unit for at least two days. Per the cook, the digital read out showed below 40*F when he checked condition in the morning. Items were embargoed and discarded. Advised staff to check internal temperatures of food with their metal stem thermometer through put the day. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed that prep cooler across from grill had an ambient temperature of 49-51*F using a max/min thermometer. Equipment must be set to hold foods at 41*F. Foods were removed from cooler and cook added an ice bath for condiments and some vegetables for easy access. TCS foods that were out of temperature were embargoes and discarded. Will return on or before June 10 to verify unit is able to keep food at 41*F. Corrective Action: Correct prior to re-inspection.
