Observed raw chicken, raw salmon and raw white fish in sandwich prep cooler by grill at 44-45*F, ambient temperature in unit was at 41*F. Items were placed into upright coolers to cool down to 41*F. Observed albacore tune, seafood salad and seaweed salad at sushi prep station by door with temperatures of 47*F Items were embargoed and discrded. Advised staff to check food temperatures at the start of shifts or during the day with a metal stem thermometer to verift foods are at 41*F. Corrective Action: Corrected at time of inspection.

Cold hold Temperature control for safety foods were moved to other refrigerator to keep at 41*F. Tuna and shrimp in unit observed to be 43*F. Repair company contacted. Reinspection to be completed on or before June 15th.
