Inspector's notes
Observed lettuce 53F, cooked burger 44-45F, ham and pulled pork 46F. PIC determined that the products were overfilled and preventing the cold air from getting into the items. PIC removed most of the product and put it into the walk-in refrigerator to cool down to 41F. Corrective Action: Corrected at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff on verification breakdown, which resulted in the violation.

Observed clean dishes stored in front of the bar hand sink between the basin and the person standing in front of hand sink. Manager said they have now using that hand sink because the original hand sink (1 foot to the right) doesn't have cold water. Manager said she will still need to put in a work order for repaired cold water there. Ensure that clean equipment is stored away from splash zone of hand sink and blocking access.
