Two hands were observed to be inoperable due to a portable AC unit connected to them. The person in charge stated that the entire A/C was not working in the kitchen, and the portable units were to be used until further maintenance. PIC stated that maintenance is to occur on Monday due to parts that were ordered. PIC disconnected one of the A/C units and connected it to the 2 compartment sink instead, as no food prep or vegetable washing was occurring at the time. Observed the salad cooler holding 55F in the bottom portion. The food items out of temperature included cut lettuce, chopped cabbage, and cheese holding 44-48F. PIC moved these items to a working unit as they were placed in the unit when the store opened. Also observed raw tuna holding 54F. The tuna was discarded. Observed sour cream stored in a melted ice bath in the server station areas next to the soups. PIC discarded the sour cream. TCS food items must hold 41F when cold holding.
