PIC stated equipment is in the process of being repaired and use ice to help maintain temperatures until equipment is repaired. It was determined ice amount was insufficient, and discussed using time as a control or keeping less product to the height of the amount of ice to ensure temperature remains below 41*f at all times. Sauces had been in cold well for more than 4 hours and were discarded at time of inspection.

#51 — Plumbing Installed; Proper Backflow DevicesPriority5-205.12

PRIORITY VIOLATION-5-205.12 (A), P: Prohibiting a Cross Connection Observed the mop sink with an AVB connected to a Y valve, leading to a large portable AC unit in the dining area. PIC stated the air condition in the facility was not working properly. The Operator has been in contact with CASM. Inspector spoke with the AC company, and the representative stated that they are awaiting on an evaporator coil that is on 8 months back order. The rep stated the unit is under warranty. Discussed importance of correcting the unit without the warranty if necessary. Inspector also recommended removing the chemical dispenser by the mop sink and attaching a hose bib vacuum breaker until the AC is corrected. PIC removed the Y valve connection and stated that it would be repaired as soon as possible. Note: Another portable AC unit is observed by the front entrance and was previously connected to the hand sink at the server station. This was disconnected during the inspection after a discussion was made to keep hand sinks accessible and used only for hand washing. Emailed the Operator the mop sink connection hand out.
