Observed tub of whipped butter on countertop left unmonitored with an internal temperature of 52*f. PIC moved to refrigerator at time of inspection to rapidly chill. Please keep all TCS foods under refrigeration when not in use. Also observed yogurt, shredded cheese, green chili peppers, salsa with an internal temperature of 55*F on serving area, unmonitored after food service ended. According to PIC, all TCS foods in food service area are discarded at the end of service. Discussed creating a time as a control policy to ensure foods are documented properly if not being held under ice when in use.
