There is a heavy buildup of grease inside the hood, on the hood baffles (one baffle is missing), on the bottom of the timer control panel and on the sides of the grill itself. SECOND REPEAT VIOLATION Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

Core-4-603.13, C: Loading of Soiled Items, Warewashing Machines -- The warewashing machine was loaded with scoops in a position such that they did not drain and there was a large food pan loaded directly on top of several smaller utensils, which blocked the spray from the smaller utensils. Discussed proper loading with the person in charge. ** Soiled items to be cleaned in a WAREWASHING machine shall be loaded into racks, trays, or baskets or onto conveyors in a position that: (A) Exposes the items to the unobstructed spray from all cycles; and (B) Allows the items to drain. ** ** Items to be washed in a warewashing machine must receive unobstructed exposure to the spray to ensure adequate cleaning.
