***2nd Repeat Violation*** Observed packets of ranch dressing, Cesar dressing and packets of salsa that state "keep refrigerated" stored inside of the reach in cooler next to the drive thru window with a temperature of 52-64'F when measured with a probe thermometer. Per PIC all items were placed in this cooler at 12pm today. All TCS items were relocated to the walk-in cooler to rapidly cool. Ambient air temperature of the cooler using a min/max thermometer was measured at 47.8'F. Discussed repairing/replacing the reach in cooler with the PIC. Also discussed using an internal thermometer instead of relying on the outside digital thermometer. Establishment has sufficient refrigeration at this time. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC placed a work order at the time of inspection. Corrective Action: Corrected at time of inspection.

PIC stated that all items had been recently placed into the unit within the last hour and relocated to the walk in cooler to cool. Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temperature of make line/reach in cooler in the drive thru area was 49F. PIC removed all TCS food items from the unit and stated that the unit would not be used until it is maintaining 41F or below. Establishment has sufficient refrigeration.
