Inspector's notes
Observed small reach-in cooler with ambient air temperature of 60°F; holding non-TCS food items and TCS sauces/dressings such as mayonnaise, ranch, and honey mustard with internal temperature range of 54°F-56°F. Per manager, items had been prepped and placed in cooler about an hour prior. Manager moved items to properly working walk-in cooler at time of inspection. Manager will place a work order to have cooler serviced and will only use walk-in cooler until reach-in cooler maintains an ambient air temperature of 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
