Observed organic material on blades of fruit slicer in dry storage area. Reviewed dishwashing protocols with person in charge and suggested a wiry brush for hard to clean spaces like the blade. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cold holding unit next to fryers displaying temperatures of 52°F to 55°F. Cold holding unit contained sauce bottles, sliced tomatoes, thawing meat, cheese, and lettuce. Discussed with person in charge importance of routinely checking all units for appropriate temperatures. PIC stated they would put a work order in immediately to repair cold holding unit. All TCS foods were within time limits and were relocated to alternative functioning refrigeration to rapidly cool to 41°F at time of inspection. TCS foods are to remain in alternative cooling unit until future repair. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
