Observed employee, in-between tasks, begin to put gloves on to prepare food without washing hands. Employee was stopped and instructed to wash hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Observed quat based sanitizer dispensing at 3-compartment sink measuring 0ppm. All sanitizer buckets were also measuring 0ppm. PIC manually added sanitizer until concentration measured between 200-400ppm. Discussed having employees manually mix water and sanitizer until dispenser has been serviced and increasing frequency of monitoring sanitizer concentration. Corrective Action: Corrected at time of inspection.

Observed cases of mozzarella sticks, sliced beef for sandwiches, and scone dough in walk-in freezer, which is located within the walk-in refrigerator, thawing due to freezer not working properly. All boxes of foods state "Keep Frozen". PIC stated there is a work order for freezer and it does have a hour-long defrost cycle. Ambient air temperature of freezer measured 38°F at end of inspection. Food items in the freezer were below 41°F. Advised PIC that refrigeration equipment shall be maintained in good repair to ensure frozen foods are maintained frozen until properly thawed. Corrective Action: Correct prior to next routine inspection.
