Observed TCS items such as cheese, raw beef, tomato paste, and sour cream with internal temperatures of 46-50*F when measured with a probe thermometer. According to person in charge, tomato paste and sour cream had been in the walk-in overnight and all other TCS items were purchased less than 4 hours prior. Tomato paste and sour cream were discarded and other items were moved to freezers to rapidly chill. All TCS food must maintain internal temperatures of 41*F and below. Discussed not prepping or cooling until walk-in is repaired. Please call inspector when repairs are complete. All other coolers and freezers were working properly at time of inspection.
