Core-6-501.12, C: Cleaning, Frequency and Restrictions >>> Observed an accumulation of soil and debris on the equipment, floor, and wall in the deep fryer area. According to PIC, a deep cleaning of the kitchen has been implemented. Discussed doing a deep cleaning in order to prevent pest harborage conditions, pathogen growth and for general sanitation. PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean to prevent pest activity and pathogen growth. 3RD CONSECUTIVE Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability>>> Observed missing floor tiles and tiles in disrepair under the pizza oven and deep fryer. Also observed the cove base around the walk-in cooler to be in disrepair. Discussed replacing the floor tiles and cove base to eliminate voids/gaps and allow water to properly drain and prevent pooling which could attract pests such as insects and rodents or contribute to problems with certain pathogens such as Listeria.
