Manually ware wash food equipment in 3 compartment sink until mechanical dishwasher works properly.

Three sheet trays of fried chicken balls cooling out at room temperature on speed rack at 105 -112 F. As per person in charge they finished cooking about 1 hour prior. Sheet tray of large fried chicken and pork wontons cooling out at room temperature at 77 F. As per person in charge they were cooked about 2 hours prior. Chicken balls were placed in the walk in cooler to rapidly cool. Large chicken and pork wontons were reheated to over 165 F at inspection and then set up for proper cooling. Reviewed proper cooling times, temperatures, processes and how to check thermometer calibration using ice water at 32 F.
