-- In the walk-in refrigerator multiple cases or raw shelled eggs stored on shelf above ready-to-eat (RTE) folded eggs, whipped cream, syrups, and candies for shakes. No visible contamination observed. At the time of inspection, the person in charged placed eggs below RTE foods. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent risk of cross contamination. Corrective Action: Corrected at time of inspection.

Sanitizer solution at 3 compartment sink observed well above 400pm using inspectors test strips. Establishment did not have test strips readily available at time of inspection. A new solution was made with proper concentration. PIC advised the dishwasher to rinse all dishes that were recently sanitized in the strong solution. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. Quat sanitizer must have a concentration of 200-400ppm. PIC stated that test strips will be on the next delivery order. Corrective Action: Corrected at time of inspection.
