In service deli case/52F, observed TCS food holding at 48F-55F including sausage patties, meatballs, potato salad, cheddar cheese, swiss cheese, capicola, pepper jack, seafood salad, chicken salad, cut cabbage mix, roast beef, mortadella, turkey, pastrami ham corned beef and bacon. during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held more than four hours were discarded by PIC at time of inspection. Staff will use other available refrigeration until the case is repaired/replaced. Corrective Action: Corrected at time of inspection.
