Inspector's notes

Observed gelato made in house at the market and dessert station at time of inspection. After discussion with the person in charge, it was determined that the gelato base is made in house with dairy (milk/heavy cream), eggs, sugar, etc. Gelato for sale in house only. No pasteurization machine or alternative pasteurization process is in place for the gelato. If a retail food facility is making their own “mix/base”, regardless of the use of raw or pasteurized ingredients, the frozen dessert mix shall be pasteurized. Establishment may either purchase a 3-A compliant Non-Coiled Batch Pasteurizer (A.A.C.R3-2-807), apply for a variance with the Maricopa County Environmental Health Division for alternative pasteurization process approval, or purchase a pasteurized mix from a 3rd party provider. Reviewed with chef, either obtain an approved batch pasteurizer, obtain a variance for frozen dessert made onsite, purchase pasteurized mix from a third party provider, or discontinue frozen dairy desserts by next routine inspection. A variance/HACCP must be obtained prior to conducting any specialized processes. Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. According to PIC and cooling logs the potato salad was made today and had been cooling for less than 6 hours. Make tables/prep refrigerators on cook line are not designed to be used for cooling. PIC moved the potato salad to the walk in refrigerator to resume cooling. Corrective Action: Corrected at time of inspection.

In the walk-in refrigerator observed a container of short rib jus/80°F and a tray of mashed potatoes/107°F. The containers were over 4 inches deep. In an ice bath near the baking area observed a large container of white pizza sauce/71°F. The container of white pizza sauce was over 12 inches deep and a small ice wand was observed in the product. After discussion with the PIC and reviewing the establishment’s cooling logs all TCS foods had been cooling for over two hours.

According to the PIC the refrigerator was restocked 2 hours prior.

Chef stated that it was made 1 hour prior to inspection and had staff member move product to a shallow pan to continue the cooling process. Discussed with Chef that when cooling, acceptable methods include placing food in shallow pans, separating the food into smaller or thinner portions, using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer, or adding ice as an ingredient.
