Observed three pans stored and stacked on the shelf as clean with visible food debris on the surfaces in the ware washing room. Observed a fully assembled deli slicer in the back prep area. Per PIC the slicer was in clean condition and was not used today. The back of the blade food contact surface was found with significant dried food debris from previous use. Food contact surfaces must be clean to the sight and touch. PIC will fully disassemble and clean before next use. Corrective Action: Corrected at time of inspection.

Observed the low temperature dishwasher with 0 ppm of chlorine concentration after final rinse in the kitchen. Observed dishes in the dish machine at time of inspection. It was determined that the sanitizer supply feeding the dish machine was low. PIC replaced the supply of sanitizer with a new one, primed the machine, and ran the dish machine again. Sanitizer concentration was retested at 100 ppm. Please ensure chlorine sanitizer is maintained at proper concentration of 50-100 ppm using test strips.
