Observed 0 PPM of QUAT sanitizer in three compartment sink actively being used to wash dishes. Discussed filling sanitizer water high enough to submerge dishes for proper sanitation. PIC, manually poured quat into third compartment, to ensure sanitizer levels were at 200 PPM. Service ticket was also submitted at time of inspection.
