Predefined Comment: No County legal action will result from this inspection.According to the PIC, the establishment plans to install a dish machine in the kitchen. At time of inspection, the establishment only has a three-compartment sink in the kitchen (dish machine at coffee bar). Installation of equipment that may affect water demands (i.e. dishwasher/sink installation) will require a remodel application with MCESD. If an NSF approved commercial dishwasher is installed an approved 3-compartment sink is still required.Equipment/facility inspection. No food operation occurring at time of inspection. Discussed removing articles that are not needed for the operation or maintenance of the establishment.

No employee with supervisory and management responsibility with the authority to direct and control food preparation that is deemed a certified food protection manager (CFPM) was present at time of inspection. A CFPM is required to be onsite during the hours of operation. According to the establishment's person in charge/ food and beverage manager they have a CFPM, but they were not able to provide a copy at time of inspection. Please obtain certified food protection manager certification and keep certification accessible for health inspections. Corrective Action: Correct prior to next routine inspection. Repeat Violation: 2nd.

Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Installation of fully plumber permanent sink would be needed within 25 feet of the mobile bar while operating. Facility/equipment inspection, no food service conducted today.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. According to the PIC a work order for repair has been submitted. PIC will discontinue storing TCS foods in malfunctioning freezer until it is repaired and maintains 41°F or below. Corrective Action: Corrected at time of inspection.
