Observed build up of pink residue in the ice machine near the ice shoot and build up of residue on the soda gun in the bar area at the time of inspection. In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, they must be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or organic matter. Observed ice scoop stored in the ice machine at the time of inspection. Also observed between use gelato scoops in two basins of standing water at 114*F and 84*F at the time of inspection. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. The ice scoop was stored in a clean, dry container outside of the ice machine and the PIC turned on the water heater to the gelato scoops to reach 135*F at the time of inspection. Corrective Action: Corrected at time of inspection.

An employee behind the open kitchen was chewing food, and when the manager asked him what he was eating, he responded, "A piece of bread." The manager directed me to a space designated for employees to eat and drink in the backyard, provided with tables and chairs. The manager trained the employees not to eat anything in the food prep or cook area. Corrective Action: Corrected at time of inspection.
