Observed blueberry compote made in house from 5/14 in the tall cold holding unit in the bakery area. Observed shredded mozzarella int he tall cold holding unit in the prep area from 5/10. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed two cartons of raw in shell eggs above RTE foods like sauces, meats, and pastry's in the door refrigerators located back of house. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Predefined Comment: No County legal action will result from this inspection.Found onion soup, tomato soup, chicken broth, beef stock, roasted chicken, and cooked rib eye in a reach-in cooler in the cook line and walk-in cooler. The chef stated the establishment is considering modifying the menu and adding more food items. Advised chef that under the approved permit only cook and serve is allowed. So if soups or other meat items are cooked to be used within a few days, the license of operation has to be modified to higher level. Also, equipment such as ovens have to be stored under the hood and the hood is not large enough. Please contact supervisor to determine the scope of the risk associated with your menu and cooking and service operation.
