Inspector's notes
Observed bagged dairy creamers being held in a refrigerated cold holding unit with an internal temperature of 48*F. Internal temperature registered with an internal probe thermometer. Per PIC all bags were kept in for several days prior to inspection. Ambient temperature of unit registered 52*F with min/max thermometer. Observed broken gaskets protruding out of container when closed, preventing a full seal. Observed ice build up around fans of unit, restricting cold airflow to the unit. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC has submitted for maintenance on unit and will refrain from placing dairy creamers into unit until repaired to hold temperatures at 41*F or less. Corrected at time of inspection.

Observed syrup from soda bags leaking on the floor from the BIB. Observed soda syrup leaking from line onto the floor and heavy accumulation of soda syrup on the floor. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Correct prior to next routine inspection.
