Observed a container of sliced ham in a reach-in refrigerator without any date marking on it. According to the person in charge, the sliced ham had been opened and placed into the new container two days prior to the inspection date. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Inspector's notes

Observed a large bucket of salsa in the walk-in refrigerator that had just been cooked and placed into the walk-in cooler to begin cooling. The internal temperature of the salsa in the bucket as measured using a probe thermometer was around 140°F. It was observed that the bucket was filled to the brim and was at least 12 inches in depth in the bucket. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Observed a metal lid on a pot of simmering salsa that had various perforations in the lid, and it was observed that in one jagged perforation of the lid, a small wire from a wire scrubber was observed in the crevice. The person in charge disposed of the damaged metal lid and used a non-damaged lid in its place. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Per person in charge, the machine was used this morning and was cleaned after. The owner arrived while on site to take apart the unit and have it cleaned and sanitized. Reviewed cleaning procedures with the person in charge and discussed improving training to ensure the slicer is properly cleaned after each use.
