Discussed proper pest control practices with PIC. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a spray hose with a spray head pressurized with water located at the mop at time of inspection. The spray head and hose are connected downstream from the Atmospheric Vacuum Breaker (AVB). Discussed that, unless disconnected after every use, no downstream shutoffs are to be installed downstream from the AVB. Discussed with the PIC that AVBs are not designed to withstand constant pressure and may fail to prevent backflow in as little as 12 hours. Advised PIC to disconnect spray head while not in use and reconnect as needed when actively in use. The PIC disconnected the hose and stored the spray head above the flood line of the sink at the time of inspection. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection. Corrective Action: Corrected at time of inspection.

Prep cooler at South end of cook-line found with pre-cooked chicken wings, mac & cheese, and a corn down with internal temperatures of 44-50*F. PIC stated the items were placed in the cooler 3 hours ago and moved them to the walk-in for cooling and continued cold holding. The upper portion of the prep cooler was using an ice bath to maintain TCS food items cold but the bottom portion of the unit was providing a 44-46*F ambient temperature. The bottom portion of the cooler will not be used for cold holding of TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
