Observed several metal pans at the clean dishes storage rack that upon separation, were observed to have water still trapped between the stacked pans. The person in charge separated the wet dishes so they could finish air-drying. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.

Observed lettuce in back prep area with internal temperature of 45-46° F. Discussed with PIC when the lettuce was prepped, and they said before opening hours. PIC voluntarily discarded of lettuce. All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed with PIC to not fill containers all the way to the top to prevent any TCS foods from rising in temperature. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. PIC was instructed to make a new batch of sanitizer at the time of inspection. New batch measured at 400ppm. Quat sanitizer solution for sanitizing food contact surfaces must be in the concentration range of 150-400ppm. Observed dishes and pans being sanitized in the initial solution.
