-- Chlorine concentration undetectable on dishes in low temp sanitizing dishwasher. The sanitizer container was discovered to be empty at the time of inspection. After replacing the empty sanitizer container and priming the dishwasher, the concentration levels measured between 50ppm-100ppm. Ensure employees are monitoring detergents/rinses/sanitizers used for dish machine and utilizing test strips to verify food contact surfaces and equipment are sanitized at the proper concentration range. Corrective Action: Corrected at time of inspection.

Reviewed HSP requirements: in facilities serving a highly susceptible population, raw shell eggs may only be used for hard boiling or as an ingredient in baking mix for shelf-stable products such as cakes, muffins, brownies, etc. Advised due to egg shortage, unpasteurized eggs can be used, but must be fully cooked. The PIC stated the unpasteurized eggs will be fully cooked Verified on menu unpasteurized egg options are fully cooked only.

Advised the person in charge (PIC) that when serving a HSP (Highly Susceptible Population) only pasteurized eggs must be used, except when baking, hard-boiling, or fully cooked (if there is an egg shortage). The PIC stated the unpasteurized eggs are being used for breakfast due to egg shortage and egg of choice options will be fully cooked for assisted living (AL) and memory care (MC) residents. Discussed updating menu that states "egg of choice" options are only fully cooked (i.e., over-hard, fried eggs, scrambled hard, etc..) until pasteurized eggs are available.
