Inspector's notes

Observed cooked pasta stored in the a prep cooler near the stove with an internal temperature range of 52F-55F. Per PIC, the pasta was prepared yesterday. Also observed house made ranch, and blue cheese stored near the register with an internal temperature range of 50F-52F. Per employee, the ranch and blue cheese had been out for over 4 hours prior to inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed house creamy balsamic dressing and lettuce with internal temperature between 47 and 50 degrees Fahrenheit. Per PIC, items had been there longer than 4 hours and were discarded at the time of inspection. Per PIC, another unit has been ordered/shipped as current unit has been in disrepair for a while. TCS foods shall be cold held at 41 degrees Fahrenheit or below to prevent microbial growth.
