Inspector's notes
Observed mini corn dogs in reach in freezer on the cook line with internal temperature of 46 degrees Fahrenheit. Also observed, in the walk in refrigerator, containers of salad and romaine lettuce with temperatures between 46 and 50 degrees Fahrenheit. Mini corn dogs that were out of temperature were discarded as they had been checked at 6 am and were unsure when they went out of temperature. Lettuce was just prepared and containers were cracked to allow to cool to 41 degrees F. more efficiently. Corrective Action: Corrected at time of inspection.

Observed a small metal container of sliced ham in the pizza cold top with an internally probed temperature of 45-51 degrees F. Person in charge (PIC) discarded the ham. Observed 2 canisters of whipped cream at the bar with an internal temperature range of 55-62 degrees F. Observed cooked hamburger in the pizza cold top with an internally probed temperature of 50-55 degrees F. PIC stated item has been there for 30 minutes. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
