Observed dishwasher handling and washing dirty dishes and then proceed to handle cleaned and sanitized dishes without washing hands. Discussed proper hand washing with PIC. Hands must be washed after handling dirty dishes before handling cleaned and sanitized dishes. Dishwasher washed hands for 20 seconds at the time of inspection before continuing to put away clean dishes. Corrective Action: Corrected at time of inspection.

Inspector's notes

At time of inspection, observed high temperature dishwasher utensil surface temperature at 138-148.5F as per min/max thermometer. PIC ran the machine multiple runs, and the dish machine was not getting up to temperature. PIC shall discontinue use of mechanical dishwasher and exclusively use the three compartment sink until mechanical dishwasher is fixed to standard. A high temperature must have a final rinse temperature of 160F or higher for proper sanitization of food contact surfaces. Corrective Action: Corrected at time of inspection.
