PIC stated that they will label the refrigerator with signage indicating the unit is not to be used for food storage. Inspector's notes

Observed 4-door cabinet refrigerator located on the cook line operating at an internal temperature of 71.2'F at time of inspection. All TCS items within the unit were stored following breakfast service about 20 mins prior to inspection and were relocated to adjacent refrigerator immediately to maintain temperatures at or below 41'F. PIC scheduled a servicing and will discontinue use of the refrigerator until the issue has been resolved. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A reinspection will occur on or prior to 6/17/2025 to verify the correction. Corrective Action: Correct prior to re-inspection.

Inspector's notes

Observed red salsa with tomatoes (50'F) being stored in an open top cold-holding unit on the expo line. Per PIC, they were placed in the unit 5 hours prior to inspection, and the unit is normally filled with ice to keep TCS food items below 41'F at all times. Ice had been emptied from the unit to prepare for lunch service prior to inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
