Inspector's notes
Observed packaged salads, hummus, cracker/cheese combos in the open display fridge at 50-63°F measured by infrared thermometer. A salad was then opened and the temperature was measured to be between 47 and 54°F by probe thermometer. Items had been overfilled in the front and corners and had not been cooled properly by the vents. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All items out of temperature had been placed in the fridge or moved to the front within 4 hours. All items moved to reach-in fridge to rapidly cool at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cove base separated from the wall around the mop sink. In facilities which use water flush cleaning methods coved base is sealed to wall and floor. In facilities which do not use water flush cleaning methods the coved base should be closed to 1 mm. PIC stated they would put in a work order to repair the wall and cove base. Corrective Action: Correct prior to next routine inspection.
